Tasting Notes: Brilliant straw yellow, very intense bouquet of citrus fruits, white flowers and Mediterranean fruit such as peach and apricot. In the mouth it is full-bodied, fresh, and crunchy marked by a sapid and pleasant finish.
Winemaking: The ripe grapes harvested manually are vinified in “white” with crushing and soft pressing, using the semi-reduction technique (absence and/or low oxygen content). The clarity of the must is obtained by cold static decantation for 24 hours. Fermentation takes place at 16-18°C at a controlled temperature, with the aid of cold technology. This is to maintain all the varietal aromatic fragrance. Aging until January/February in thermo-conditioned containers.
Food Pairings: Enjoy as an aperitif, with vegetarian and seafood cuisine, and delicate seafood first courses.
