Tasting Notes: A mix of earth tones with blackberry, baking chocolate, and a touch of aged menthol. Lengthy, yet soft tannins.

Winemaking: Picked from select vineyards in the Happy Canyon area. All grapes were destemmed and fermented in open top tanks for 14 to 18 days, depending on the lot. Pumped over twice daily to extract the optimal amount of color and tannin. The wine was pressed to stainless to complete secondary fermentation and then racked to foudre for aging.

Food Pairings: Perfectly paired with pasta Bolognese, or alongside your favorite smash burger.
