Winemaking: Hand-picked grapes. Harvested in September. The grapes are cooled with carbonic ice to avoid oxidation. Soft pressing, low temperature fermentation for 8-10 days. Contact with fine lees for 2 months in stainless steel.
Tasting Notes: Light pale yellow in color. On the nose it is aromatic and fresh, followed by white fruit and herb aromas. On the palate it is sapid with a distinctive volcanic minerality, lively acidity, fresh and salty, mineral essence lingers on the finish.
Food Pairing: A foodie wine, it goes wonderfully with seafood, grilled veggies and meats, or even better with salads or pasta.
International Wine Report: “The 2022 Etna Bianco begins with attractive aromas of orchard fruits, lemon, pear, straw and fresh white flowers. On the palate is is fresh and clean, balanced with a nice combination of acidity and minerality on the finish. This is a fantastic bianco which is drinking beautifully today and will pair excellent with a wide range of Mediterranean seafood dishes.”
