Tasting Notes: This wine has a golden pale color with green highlights. The nose is very fresh, lively and mineral’ there is flint, green apple, and lemon. On the palate, its aromas keep their freshness for a long time. Long and happy persistence.

Winemaking: Hand and mechanical harvest. Full grape pressing. Cold settling during 24 to 48 hours. Limitation of inputs, yeasts and bacteria partly natural. Alcoholic and malolactic fermentation in stainless steel tanks. Aged in stainless steel vats for 6 to 12 months.

Food Pairings: This Chablis has a great aromatic complexity, which predisposes it to many combinations, in particular hot oysters, fish in sauce, fine poultry and veal in white sauce.
