Tasting Notes: 100% Piquepoul noir, a forgotten variety brother of Piquepoul blanc. The name evokes the way in which hens (“Poules” in French) peck (”Piquer” in French) the grapes scattered on the ground. Delicate aromas of rose petals, lilac flowers, vine peaches and mango. Exotic mouth, full of freshness, with a citrus finish of lemon and lime.

Winemaking: Direct pressing at low temperature. A six-day contact with the lees from the must. Cold settling. Alcoholic fermentation in stainless steel vat with temperature control. Aged 4 months in stainless steel vats.

Food Pairings: Drink chilled. Pair with shellfish, fried seafood, or tapas.
