Vinification and Ageing: Grape harvesting depends on the maturation of every single parcel of the vineyard. The grapes are divided according to their original lot. Polyphenol elements are extracted thanks to pumps over and punches down. At the end of the fermentation, 18-month malolactic fermentation takes place in new or second passage French oak barrels. After a wine tasting, each different lot is blended and then wine is bottled.

James Suckling: “Quite a dense, compact Bolgheri with tons of ripe black cherries, licorice and hints of prune and iodine. Bold and full-bodied, load with dusty firm tannins that provide a comfortable grip to the long finish. Some dried fruit in the end. Fine-grained, high quality tannins here. An outstanding Bolgheri, but a little more freshness would take it to the next level. Drink or hold.”

Wine Advocate: “A blend of 85% Cabernet Franc and 15% Cabernet Sauvignon, the Podere 7 Sette 2019 Bolgheri Superiore Il Superbo is a fun and quirky wine with a bright bouquet and lifted intensity. The aromas come right out at you with rosemary, ginger snap, dried fruit and plum. Il Superbo is rich and full-bodied, yet the tannins remain silky and polished. This wine would work next to a classic pork roast and potatoes. 8,000 bottles were released.”
