Tasting Notes: On the nose it has a full and fragrant bouquet, delicately spiced with hints of wild berries. On the palate it is pleasant, full-bodied, harmonious, and savory.
Winemaking: Fermentation with maceration. Aged in steel for 8 months, then in bottle.
Food Pairings: Ideal wine to accompany red meats, roasts, game, aged cheeses and cold cuts.
International Wine Report: “The 2019 Bolonero Castel Del Monte opens to aromas of fresh black cherries, dark plums, tobacco and spices. On the palate this is medium-bodied with a soft round texture that is backed by flavors of dark cherries and hints of cherry pipe tobacco that lead up to the velvety finish.”
About the Winery: “Bolonero is a word from the Puglia slang. ‘Bolo’ means ‘mix’, traditionally it’s the mix of water and clay to make the concrete to seal the stones to build the homes of rural constructions in Puglia. ‘Nero’ means ‘Nero di Troia’. It turns out to be a fantasy name for the blend of Nero di Troia with Aglianico.”
