Tasting Notes: Deep cherry red in color. Aromas of black and red fruits such as plums, blackcurrants and cherries, with notes of fresh tobacco, cinnamon and roasted coffee beans. On the palate it has a great body with abundant velvety tannins, rounded, delicious, persistent, balanced and complex. With great aging potential.
Food Pairings: Pair with stews, game birds, pork, or red meats in general.
Winemaking & Terroir: The fresh, dry climate provides an ideal terroir for producing structured, elegant red wines with long persistence. The total maceration period is from 32 to 35 days, aging is 80% in French oak foudres of 2,000 and 4,000 liters and 20% in new 225 liter French Oak barrels where it undergoes malolactic fermentation and is stored for around 18 months.
James Suckling: “An expressive cabernet with a mixture of red and black fruit with some baking spices and grilled herbs. Lots of cherries and currants. Medium-to full-bodied on the palate, but really crunchy and drinkable with tight but chalky tannins. Impressive freshness from the acidity and the fruit. A wine you’d want to drink immediately, but it will age, too.”
